ScSince Steve and I attend the evening service of church on Sundays, I usually try to make dinner using the oven, rice cooker or crock pot so that dinner would be pretty much ready when we got home. Tonight, I made a pulled pork with the crock pot and it turned out so delicious.
This recipe is an adapted one from the internet. It involves using root beer to cook the pork and then adding BBQ sauce towards the end of the cooking cycle. We had some delicious Virgil's root beer in the fridge and decided to use that to cook the pork. OMG...sooo good.
I started the crock pot around 10 this morning and we had dinner around 7:30, so the cook time for this meal was about 9.5 hours.
Ingredients
2 pounds of pork shoulder
1/2 onion diced
1 12oz. bottle of virgil's root beer
1 cup of honey BBQ sauce
3 T soy sauce
salt to taste
Procedure
1. Turn on the crock pot and set it to the low setting.
2. Place the pork shoulder and onions into the pot, pour the root beer into the pot and let it cook for 7 hours.
3. Scoop out most of the broth that's in the pot (you can save this and make a soup out of it, it's quite tasty on its own) and add the rest of the ingredients. Use tongs to pull the pork apart and then cook for about 1-2 hours more.
4. Serve with some good crusty bread and pickles.
I also made some green beans to go with the dish. I simply heated a saute pan with 1 t of olive oil, added 1/2 t of chicken bouillon powder, 1 clove of garlic, the green beans and about 3 oz. of the root beer/pork broth and allowed it to cook for about 5 minutes. The sauce was sweet and savory and it went perfectly with the sandwiches.
